ಜುಣಕ / ಹಿಟ್ಟಿನ ಪಲ್ಯ  

ಇದು ನಿಮ್ಮ ಅಡುಗೆ ಅರಮನೆಯಲ್ಲಿ, ಅವಸರದ ಅಡುಗೆ ಮಾಡುವ ಒಂದು ವಿಧಾನ  :)


This is a easy recipe, which can be done when you are not in mood of washing vegetables, cutting them to prepare a dish. Its tangy, spicy goes well with preferably Jolada roti, can be had with chapati. this is normally known as North Karnataka / Dharwad dish.
Here am using Green gram flour instead of  Besan flour.

Ingredients :
Green gram flour/Besan flour(chick pea flour) : 1 cup
Onion : 1 medium
Green chilli paste : 1tsp
Tamarind juice/ Sour Butter milk : 1 cup
Curry leaves, coriander lews : Few
Jaggery : 1- 2 tsp
Chopped, fried Ladies finger : 1 cup (optional)
Oil : 1 Tbsp
Mustard seeds, jeera for seasoning.


Method :
Take green gram flour in a bowl add water to make it a watery paste, keep it aside.
Here am using one cup of sour buttermilk instead of tamarind juice, to get sour taste.

Now take a vessel add oil, add mustard seeds, jeera, curry leaves, few chopped coriander, now add chopped onions. add chili paste, if you dont have chilli paste crush 2 -3 green chillies & add.
Saute for few mins, when onion turns to slight brown, add buttermilk



bring it to boil, add water, now add the green gram flour paste to it, let it come to boil, now add jaggery, salt, here am adding chopped & fried ladies finger/bendekai, this goes well with Junka.


let it boil for few minutes, turn off the flame, finally add some chopped coriander leaves.


You can make it more tangy , more spicy by varying the proportions of tamarind juice, chillies & jaggery.

Junaka with Jolada Roti
If its made to the thickness of sauce it can be had with roti. if its made to the thickness of sambhar can be had with rice. It can be made more thick also, so it can be cut in to cubes, will share that some day.
